Day 110: Marshall Islands and Sweet Macadamia Pie


Good evening, Raffies!

Today we are, once again, going for a dessert for the Marshall Islands.
We are going to make some nice Macadamia Pie.

First of all, I started with a basic pie dough. Usually, the easiest and fastest for me is a simple shortcrust pastry.

Ingredients:

2 eggs
500 g flour
200 g sugar
250 g butter, from the fridge
zest of 1 lemon

Start by mixing the eggs and the sugar until they are creamy and light yellow. Add the remaining ingredients and work the dough with your hands until smooth. Form a ball with the dough and wrap it into cling film and refrigerate for at least 30 minutes.

For the filling:

1/4 c grated coconut
1 3/4 c macadamias
3 eggs
3/4 c brown sugar
1/2 c honey
1 tbsp butter, melted
2 tbsp coconut milk

For the frosting:

Since I am no fan of whipped cream, I mixed equal parts of cream cheese and coconut milk

Start by rolling out the dough in a pie form. Spread the grated coconut on thew dough.
In a bowl, mix together all the ingredients and add the nuts. Pour the filling on top of the dough.
Bake in an oven at 180°C for 15 minutes, reduce heat and bake another 20 minutes at 160°C.
Cool down and refine with the frosting. Enjoy!

This cake was really nice. Nutty and not too sweet. Actually, I worried it would be very sweet when I saw all the brown sugar and honey that went in there, but it seems like the nuts evened out the sweetness. Great idea for a quick dessert or an afternoon tea!
