Today we are going to Malawi. We are making a traditional dish: Ndiwo with Nsima.
Starting with Nsima, this is a staple food in Malawi and Zambia. It is a porridge like dish, made from white cornmeal. This dish is to be found with different names in most African countries.
The preparation is quite simple. You start by boiling the cornmeal with water. Then you pad the porridge with a wooden spoon, by adding more flour. In the end, you portion it with a wooden spoon that has been coated with some oil.
Traditionally, you eat with your hands, which explains why the porridge has to be thick and dry.
Let's move over to Ndiwo. This is an extremely simple sauce to be served with your Nsima.
You'll need:
4 c greens (chard or kale work perfectly. I personally used chard)
2 tomatoes, chopped
1 onion, chopped
1 tbsp oil
salt
1-2 c water
Combine all the ingredients in a pan and cook until soft. If need be, add more water. If you do not want to serve it with Nsima, you can also serve it with rice.
I liked this dish, because it is perfect for days where you do not feel like cooking or are incredibly hungry and want food to be ready as soon as possible. and just want to eat something healthy. Great recipe!
