Day 81: Iraqi pink rice
Good evening, Raffies!
Today we are continuing our Persian excursion and are visiting Iraq. While searching for a recipe, I noticed that the Iraqi cuisine resembles the Iranian cuisine. What caught my eye was the pink rice.
The recipe is very simple and easy, but tasty.
All you'll need is:
2 c rice
3 tomatoes, chopped
1 can tomatoes
1 onion, chopped
1/2 c cilantro
2 stalks cellery, chopped
salt
pepper
dill
garlic powder
olive oil
Start by frying the onion in the oil. Add the rice and stir for 2 minutes. Add the remaining ingredients, apart from the cilantro and stir well. After a few minutes, add 2 cups of water. Cover the pan with a lid and let it simmer. Do not open the pan while cooking. After approximately 30 minutes, the dish will be ready. Serve with chopped cilantro.
Even though very simple as a dish, The pink colour the rice gets from the initial cooking of the rice - before adding the water - looks impressive.
