Day 138: Paraguay and Alfajores de maicena con dulce de leche


Hola, Raffies!

I have been looking forward to this dish for a long time..to be honest, I wanted to make this dish for Argentina, because it was thanks to my Argentinian friends that I first came to taste this little piece of heaven..well, now we are in Paraguay and it is high time I made Alfajores de maicena con dulce de leche. These cookies are so incredibly fragrant and the dulce de leche in between is simply out of this world!


Without further ado, here is the recipe translated from my Argentinian original:

200 g flour
300 g Maizena
150 g sugar
3 egg yolks
1 tbsp coñac
1 package vanilla sugar
1 lemon, zest
1/2 lemon, juice
200 g butter, soft
1 tsp backing soda
2 tsp backing powder
Dulce de Leche
Grated Coconut

In a bowl, mix the dry ingredients: flour, Maizena, baking powder and baking soda.
In another bowl, mix the sugar with the butter until slightly creamy. Add the egg yolks and slowly mix a bit more. Now add the coñac, the zest and the lemon juice and mix some more. Gradually add the flour mixture from the first bowl. Do not mix too much. The dough has to be soft, but not too smooth. It has to be crumbling apart.
Leave it to rest for about 15 minutes.
Now, heat the oven at 160°C and on a floured working surface, roll out the dough to a thickness of about half a centimetre. Cut out small round shapes of about 3-5 cm diametre. Bake in the oven for 15 minutes and leave to cool down.
Take two cookies and spread dulce de leche in the middle. Roll on some grated coconut and enjoy!
