Day 137: Papua New Guinea and Chicken and Greens in coconut milk


Good evening, Raffies!

And we only have 2 months left, before we are through with our quick tour around the world..
Today we are going to Papua New Guinea and we are going to enjoy a really simple, yet delicious dish: Chicken and greens in coconut milk.
This is a common dish on the islands, since it uses ingredients that can be found, without having to import anything: chicken, greens and coconut.

The recipe is really simple, once again:

300 g chicken pieces
500 g mixed greens (like spinach, chard, endivia, etc.)
2 cloves of garlic
1 1/2 c coconut milk
1 cm fresh ginger, thinly chopped
1 small squash, chopped
oil
salt & pepper

Start by frying the chicken in oil until slightly brown with 1 clove of garlic. Now add the coconut milk, the ginger and the second clove of garlic. Leave it simmering for 15 minutes.
Add the squash and cook for another 15 minutes. Add the greens and cook for another 5 to 10 minutes. Season with salt and pepper and serve on rice.


The dish was simple, but delicious. It worked really well with the rice. Now it would have been great if the weather would have been a bit more like Papua New Guinea..
